The ατom series

 The “ατom” series is another new concept that focuses on showcasing the potential of non-Amfissis olive varieties that are sparsely planted across our groves.

 The idea centers on harvesting and milling each variety separately, in order to produce high-quality monovarietal extra virgin olive oils with distinct flavor profiles that cater to a wide range of preferences. The intensity of fruitiness, bitterness, and pungency varies depending on the variety, while the composition of the collection vary each year according to the harvest.

 For the 2025–2026 harvest, all oils in the series carry a health claim in accordance with EU Regulation 432/2012, indicating a high content of polyphenols, which act as natural antioxidants.
